Evolution is accepted even by many Christians these days as fact. But has anyone yet witnessed a man come from a monkey, a bird from a reptile, a dog from a rat?

There is change and growth, if that's evolution fine. Even adaption. But dispite the metal age would have you think, not everything starts a minute particle and there is a God and his creative facilities and so creation, not just the 'universe.'

Seriously? Do you honestly believe that anyone anywhere ever claimed that... that what? That female chimps somewhere gave birth to human beings and that's how we got here?

With such ready-access to information and ideas, there's just no excuse for ignorance on that level. Read up. Do better.

Evolution- you have organisms that mutate randomly, an environment that changes, and those organisms reproduce more or less successfully based upon how appropriate their adaptations are compared to that changing environment. You would have to prove it didn't happen, because how can those things be true, and it not happen?

Broadly, yes- all that has been 'witnessed'. DNA is a thing that can be studied, and so can fossils. Finding a two legged dinosaur with big fluffy scales on its arms, before there was such a thing as birds- and then one very similar from later, when those fluffy scales have developed further into feathers, and then later still something a lot like a bird but still has the teeth and claws from its ancestors... I mean, yeah. That is a thing you can see if you look deep enough.

Whatever introductory literature you choose, realize that it is just that: a brief outline. If your concept of evolution requires a 285-page outline, you might have some standing, but right now you don't. Not that it matters, few do, but few choose to disregard the bulk of modern genetic science in favor of Genesis. It's not like you have the tip of the iceberg to examine. The iceberg is thousands of miles away and you are a Fiji native, you aren't even aware of what's out there to learn on the subject of evolution. But it's available, and most of it for free.
